About Our Barbacoa Tacos

Barbacoa is one of Mexico's oldest and most revered cooking traditions, dating back centuries to when meat was slow-cooked in underground pits. At Tacos Mexico Memorial, our Barbacoa honours this tradition with beef that is slow-braised for hours in a rich huajillo pepper sauce until it becomes impossibly tender and pulls apart with ease.

The huajillo chili gives our Barbacoa its distinctive deep red colour and complex, earthy flavour — mildly spicy with notes of dried fruit and a subtle smokiness.
